Ingredients required to make traditional Marathi recipe Sanjay Poli
dough
• 2 cups wheat flour
• salt to taste
• 1 cup + 2 tbsp water
Sanja
• 1 cup fine semolina
• 1 cup water
• 1 cup + 2 tbsp jaggery
• 4 tbsp sajuk ghee
• 1/2 tsp cardamom powder
• nutmeg powder
• pinch of salt
evening nest
• 1 tbsp sajuk ghee
• Water as required
• Sajuk Ghee

Material:
dough
• 2 cups wheat flour
• salt to taste
• 1 cup + 2 teaspoon water
Sanja
• 1 cup fine rava
• 1 1/2 cups water
• 1 cup + 2 tbsp jaggery
• 4 tbsp ghee
• 1/2 tsp cardamom powder
• nutmeg powder
• a pinch of salt
sanjyachi poli
• 1 teaspoon ghee
• Water as required
• Ghee
Method:
dough
• Mix wheat flour and salt together well and knead half a soft dough by adding water little by little.
• The consistency of the dough should be similar to chapatti dough.
• Coat the dough with about 2-3 spoons of water.
• Cover the dough and keep it aside for at least 30 minutes.
Sanja
• Heat a pan on medium flame and add rava into it.
• Fry the rava well until it turns light golden.
• Turn off the gas and keep the pan aside.
• To make syrup, heat water in a pan and add jaggery and ghee in it.
• Mix well and cook until the jaggery melts and the mixture comes to a boil.
• Lower the flame and add roasted rava.
• Mix quickly and cook the mixture until the rava is cooked well.
• No need to cover the pan. Make sure that no lumps of rava are formed.
• When the rava is cooked well and comes together like a dough, turn off the gas and add cardamom.
Powder, nutmeg powder and salt.
• Mix everything well and the sanja is ready. Let it cool completely.
sanjyachi poli
• Take flour and knead it well.
• The consistency of molasses and flour should be the same. If necessary, add water and knead the dough.
Really good.
• Apply ghee to the flour and make small balls of the dough.
• Take one of these and make it smooth and uniform.
• Mash the Sanja well once and make small balls out of it.
• Take a ball of dough and make an angel out of it like we make for the model.
• Fill the molasses ball and close the dough ball.
• Remove excess flour and seal the dough well.
• Spread dry flour on the rolling board and apply it on your hands also.
• Make a small disc by patting the dough ball between your palms and roll it into a chapatti with the help of a rolling pin.
• Heat a pan on medium flame and pour poly on it.
• If you are using an iron pan, season it first. – Spread ghee on it and wipe it with a tissue.
• Cook the poli thoroughly from both the sides.
• When bubbles appear on the poly and the lower surface gets slightly roasted, turn it and fry well.
On the other end.
• Spread ghee on the top and turn the poly.
• Spread ghee on the other side also and turn it over.
• When the poli is cooked well from both sides, take it out on a wire rack. Sanjyachi poli is ready.
• Serve it with plenty of ghee.
•With the proportions we used you can make about 12 Sanjyachya Polyas.
