To make scrambled eggs

Egg – 10 pieces
Oil – 1 teaspoon
Turmeric powder – 1/2 tsp
Red chilli powder – 1 teaspoon
Black pepper powder – 1 teaspoon
Salt – 1 teaspoon

To make egg curry

Oil – 3 tbsp
Mustard seeds – 1/2 tsp
Cumin – 1 teaspoon
Onion – 3 nos.
Green chilli – 4 nos.
Ginger Garlic Paste – 2 tsp
Tomato Puree (3 Tomatoes)
Red chilli powder – 1 teaspoon
Coriander powder – 1 1/2 tsp
Salt – 1 teaspoon
Black pepper powder – 2 teaspoons

Method:

1. Boil the eggs, peel them, cut them into half and keep aside.
2. Take a wide, flat pan and add oil into it. Add turmeric powder, red chilli powder, black pepper powder and salt.
3. Mix well and fry the powder for 10 seconds. Then add egg halves and fry on low flame for 2-3 minutes on each side.
4. Remove the fried eggs from the pan and keep them aside.
5. Put oil in a wide pan and heat it. Add mustard seeds and cumin seeds. roast.
6. When the mustard starts crackling, add onion and fry until it turns golden brown.
7. Add green chilli, ginger garlic paste and fry until the raw smell goes away completely.
8. Add tomato puree and mix. Fry until the moisture completely evaporates and the gravy thickens.
9. Add red chili powder, coriander powder, black pepper powder and salt. mix well.
10. Add water, mix well and cook the gravy for 5 minutes.
11. Slowly add the fried eggs to the gravy and cook in the gravy for 5 minutes.
12. Finally add fresh curry leaves and coriander leaves. turn off the stove.
13. Delicious, tangy and spicy egg curry is ready to serve hot with rice/roti.
