Rechido Masala, also known as Goan Ratched Masala, is a spicy and tangy paste used to marinate fish and meat. It has a variety of spices and a deep red color. Made from chilli, spices and vinegar.

Material

20 dried Kashmiri chillies

1/2 tsp cumin

12 pieces cloves

1/2 tsp turmeric powder

01 inch cinnamon stick

08 pieces black pepper

12 garlic cloves

01 cup Goa Toddy Vinegar

04 onions (cut into pieces)

02 tbsp oil

01 teaspoon salt

02 tbsp sugar

Method

1) Soak dry Kashmiri chilli in vinegar for half an hour and filter it. Cut it in half.
2) Heat oil in a pan and add onion in it. Fry it until its color turns golden brown. Take it out in a bowl and let it cool.
3) Add all the ingredients to a mixing jar and grind finely using vinegar. You can add more vinegar depending on the consistency of the spices.
4) Store it in an air-tight container for later use.
