👉 Step-by-step picture recipe:

### Ingredients for Healthy Date Bars:
– 2 cups medjool or any soft dates, pitted
– 1½ cups walnuts, plus extra for garnish
– 4 tablespoons unsweetened cocoa powder
– a pinch of salt
– 1 teaspoon vanilla extract
– Chocolate chips, for garnish

How to Make Healthy Date Bars:

1. Add 2 cups pitted dates, 1½ cups walnuts, 4 tablespoons unsweetened cocoa powder, vanilla extract, and a pinch of salt to a food processor. Process until the date and walnut mixture is finely chopped and doesn’t stick together. To check doneness, press it between your fingers. If the mixture is homogeneous and maintains its shape, it is ready. If not, continue the process until it reaches the desired consistency.
2. Line a baking dish with parchment paper for easy removal. Pour the date and walnut mixture into the prepared dish. Using the back of a spoon or your hands, press the mixture firmly into an even layer. The denser and pressed the mixture is, the better the structure of the rods will be.
3. Chop up some additional walnuts and sprinkle over the mixture with chocolate chips for decoration. Press them gently onto the surface so they stick.
4. Place the dish in the refrigerator for at least 1-2 hours to set. This cooling step is important to strengthen the bars and make them easier to cut.
5. Once it has cooled and hardened, lift the mixture out of the dish using the edges of the parchment paper. Place it on a cutting board and cut into bars or squares of your desired size. Enjoy them as a dessert bar, snack or healthy breakfast option.
5. Storage: Store these patties in an airtight container in the refrigerator for up to a week or freeze for longer storage. These can be enjoyed cold or at room temperature for their soft texture.

If the mixture is too dry and not holding its shape, you can add a teaspoon of water to it to bring it together.
