### Ingredients for Healthy Date Bars:
– 2 cups medjool or any soft dates, pitted
– 1Β½ cups walnuts, plus extra for garnish
– 4 tablespoons unsweetened cocoa powder
– a pinch of salt
– 1 teaspoon vanilla extract
– Chocolate chips, for garnish

How to Make Healthy Date Bars:

1. Add 2 cups pitted dates, 1Β½ cups walnuts, 4 tablespoons unsweetened cocoa powder, vanilla extract, and a pinch of salt to a food processor. Process until the date and walnut mixture is finely chopped and doesn’t stick together. To check doneness, press it between your fingers. If the mixture is homogeneous and maintains its shape, it is ready. If not, continue the process until it reaches the desired consistency.
2. Line a baking dish with parchment paper for easy removal. Pour the date and walnut mixture into the prepared dish. Using the back of a spoon or your hands, press the mixture firmly into an even layer. The denser and pressed the mixture is, the better the structure of the rods will be.
3. Chop up some additional walnuts and sprinkle over the mixture with chocolate chips for decoration. Press them gently onto the surface so they stick.
