Mixed Vegetable Soup – Green Soup


Green Soup in English, Time: 25 minutes, Makes: 2 people, Ingredients: 2 cups Green leafy vegetables of your choice (spinach, mutton, cowpea, some…)

Capacity: For 2 persons

2 cups chopped green leafy vegetables of choice (spinach, chard, cow’s milk, a little mint, a little flax or chukka)
2 teaspoon butter
6-7 cloves of garlic, finely chopped
1 small onion, finely chopped
1/2 tsp chilli paste
2 to 3 spoons cream
2 pinch cinnamon powder
Salt and pepper to taste

1) Choose leafy vegetables. Boil water in a large vessel. Add 1/2 teaspoon salt.
2) When the water boils, add the selected vegetables. Boil for 2-4 minutes. – Take out the vegetables in a sieve and pour cold water over them. Drain the water. Puree the vegetables.
3) Heat butter in a pan and fry garlic on it. When it turns slightly pink, add chopped onion to it and fry until the onion turns red. Add puree of leafy vegetables. Add water if necessary.
4) Add salt and chilli paste as per taste. Boil on medium flame for 5 minutes. Add cinnamon powder and black pepper and mix.
Let the soup rise in the bowl. Add cream on top.
Instead of serving just the soup, serve it with crunchy crackers or croutons.

1) Do not keep the lid on while boiling leafy vegetables, the color becomes darker.
2) If the leafy vegetables are old then puree them and filter them in a sieve.
3) Avoid bitter or rough leafy vegetables like fenugreek, shepu. Apart from this, linseed and sour Chuka should be used only for taste. If you use too much, the soup will turn sour.
