Brinjal Bhaji – Wangyachi Bhaji

Material:
1 brinjal
1/2 cup gram flour
1 tablespoon rice flour
1/2 tsp turmeric
1 teaspoon chili powder
1/4 tsp cumin
salt to taste
oil for frying

Action:
1) Cut the brinjal into thin rounds. Keep the slices in salt water for 10 minutes.
2) Always soak the gram flour batter in water a little thinner than before soaking the potato bread without lumps, this will reduce the coating of gram flour on the brinjal pieces and make them slightly crisp.
3) Mix rice flour, red chilli, cumin, salt and turmeric in gram flour. Add some ova, chopped coriander if available.
4) Heat oil in a pan. Dip the brinjal pieces in gram flour and fry them. Eat hot bhaji with green chutney or garlic chutney.
