Stuffed Brinjal – Bharlela Vanga

Stuffed Eggplant


Material:


1) 4-5 medium sized brinjals
2) 2 large onions
3) 2 tomatoes
4) 3-4 spoons peanut peels
5) 2 tsp Malvani Masala
6) 1/2 tsp cumin and coriander powder
7) oil
8) Turmeric
9) Coriander
10) Salt as per taste

Action:

– Chop tomatoes and onions and add coriander cumin powder, peanut paste, Malvani masala, turmeric and salt to the mixture, mix well and keep aside.

Brinjal should be washed and cleaned. If there are thorns in the stem, remove them.

The brinjal should be cut into four pieces. Do not boil it completely as you want to fill it with saran.
Stuff the brinjal with saran.

Heat oil in a pan. Add Saran stuffed brinjals one by one.

Fry a little red. Put all the remaining saran on top.

Add some water. The brinjal should be kept frying in between.

Cook on low flame.

Place a lid on top, pour some water in this lid so that the brinjal gets cooked quickly due to steam.

Mix this water in brinjal.

When the brinjal is cooked, add a good amount of green coriander on top.

Stuffed brinjal should be eaten with chapatti, bread or rice.
